The study assumes that recent rules relating to social distancing are part of a broader consideration, which concerns the revision of environmental design principles. It involves the removal of architectural barriers and recent contributions of Universal Design. It proposes new tools and methods for renovation and maintenance of restaurants defining new crowdedness indicators. New rules and environmental schemes for design in the post-Covid-19 era derive from the aim of guaranteeing: universal accessibility, user and employee safety and the installation of prevention measures. The experimentation (carried out on 5 study cases) deals with the scale of activity modules, environmental units, functional aggregations, distribution layouts.
